Wisconsin Fairy Food – If you’ve never heard of this treat before you aren’t alone. Also known as Angel Food Candy, Fairy Food is most popular in the state of Wisconsin and often made around the holidays. A midwestern friend mention it recently in conversation and it sounded intriguing enough that I had to give the recipe a go. It’s a hard treat to describe, but overall I’d say it’s an airy candy with a toffee or caramel flavor. Most versions of the recipe dip the harden candy in chocolate, a step I would highly encourage you not to skip.
INGREDIENTS
- 1 cup dark corn syrup
- 1 cup granulated sugar
- 1 tablespoon white vinegar
- 1 tablespoon baking soda
- 10-15 oz chocolate candy coating
PREPARATION
- Line a large sheet pan with parchment paper, then set aside.
- Add corn syrup, sugar, and vinegar to a medium-sized saucepan and stir to combine. Place pan over medium-high heat and do not stir. Bring temperature to 300 degrees F.
- Remove pan from heat and and mix in baking soda until mixture begins to expand.
- Transfer to the prepared baking sheet and allow mixture to pool out, don’t worry about spreading it out.
- Allow candy to fully cool, then break into small pieces.
- Place chocolate coating in a small bowl and microwave in 30 second increments until fully melted. Dip candy in chocolate and place back on parchment to set.
- Once fully set, store in an airtight container.
