Cheesy Dorito Chicken Casserole is full of chopped chicken, black beans, Rotel tomatoes, and cheese with lots of crunch from crushed Dorito chips. One of my very favorite Mexican casseroles!
Ingredients
- 2 cups cooked chicken, shredded
- 2 cups Doritos chips, crushed
- 2 cups cheddar or Monterey Jack cheese, shredded
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup milk
- 1 can (14.5 oz) diced tomatoes
- 1 can (4 oz) green chilies
- 1 small onion, diced
- 2 cloves garlic, mincedGarlic seasoning blend
- Salt and pepper to taste
How To Make Cheesy and Crunchy Doritos Chicken Casserole
- Preheat the oven to 350°F (175°C) and grease a baking dish
- In a large bowl, combine shredded chicken, cream of chicken soup, milk, diced tomatoes, green chilies, onion, garlic, salt, and pepper.
- Layer half of the crushed Doritos on the bottom of the baking dish.
- Pour half of the chicken mixture over the Doritos layer.
- Sprinkle half of the shredded cheese on top of the chicken mixture.
- Repeat the layers with the remaining Doritos, chicken mixture, and cheese.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown
- Let the casserole cool slightly before serving.
