Oven Baked Meatloaf and Potatoes

There is something deeply nostalgic about a meatloaf dinner. It’s the quintessential “home-cooked meal” that manages to be both humble and incredibly satisfying. When you bake the meatloaf and potatoes together, the magic happens in the oven: the juices from the meat season the potatoes, and the high heat creates a beautiful glaze that balances the savory flavors.

Ingredients

  • 1.2 lb 550 g ground beef
  • 1/2 cup 60 g breadcrumbs
  • 1/3 cup 80 ml milk
  • 1 egg
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1/4 cup 60 ml ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried parsley

For the Potatoes

  • 1.5 lb 700 g potatoes, cut into cubes
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Optional Glaze

  • 1/4 cup 60 ml ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard

How To Make Oven Baked Meatloaf and Potatoes

  • Prepare the Oven & Pan
  • Preheat oven to 375°F (190°C).
  • Line a baking dish with parchment paper or lightly grease it.
  • Make the Meatloaf
  • In a large bowl, mix breadcrumbs + milk and let soak for 2 minutes.
  • Add ground beef, egg, onion, garlic, ketchup, Worcestershire sauce, and spices.
  • Mix gently until everything is evenly combined (avoid over-mixing).
  • Shape into a loaf and place in the center of the baking dish.
  • Add the Potatoes
  • In a bowl, toss potato cubes with olive oil, paprika, garlic powder, salt, and pepper.
  • Arrange potatoes around the meatloaf in the same baking dish.
  • Optional Glaze
  • Mix ketchup + brown sugar + mustard.
  • Brush the glaze over the top of the meatloaf.
  • Bake
  • Bake for 55–60 minutes, or until meatloaf reaches 160°F (71°C) inside.
  • If potatoes are browning too fast, cover with foil.
  • Rest & Serve
  • Let the meatloaf rest for 10 minutes before slicing.
  • Serve with the roasted potatoes.
