There is something deeply nostalgic about a meatloaf dinner. It’s the quintessential “home-cooked meal” that manages to be both humble and incredibly satisfying. When you bake the meatloaf and potatoes together, the magic happens in the oven: the juices from the meat season the potatoes, and the high heat creates a beautiful glaze that balances the savory flavors.

Ingredients
- 1.2 lb 550 g ground beef
- 1/2 cup 60 g breadcrumbs
- 1/3 cup 80 ml milk
- 1 egg
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1/4 cup 60 ml ketchup
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 tsp dried parsley
For the Potatoes
- 1.5 lb 700 g potatoes, cut into cubes
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Optional Glaze
- 1/4 cup 60 ml ketchup
- 1 tbsp brown sugar
- 1 tsp mustard
How To Make Oven Baked Meatloaf and Potatoes
- Prepare the Oven & Pan
- Preheat oven to 375°F (190°C).
- Line a baking dish with parchment paper or lightly grease it.
- Make the Meatloaf
- In a large bowl, mix breadcrumbs + milk and let soak for 2 minutes.
- Add ground beef, egg, onion, garlic, ketchup, Worcestershire sauce, and spices.
- Mix gently until everything is evenly combined (avoid over-mixing).
- Shape into a loaf and place in the center of the baking dish.
- Add the Potatoes
- In a bowl, toss potato cubes with olive oil, paprika, garlic powder, salt, and pepper.
- Arrange potatoes around the meatloaf in the same baking dish.
- Optional Glaze
- Mix ketchup + brown sugar + mustard.
- Brush the glaze over the top of the meatloaf.
- Bake
- Bake for 55–60 minutes, or until meatloaf reaches 160°F (71°C) inside.
- If potatoes are browning too fast, cover with foil.
- Rest & Serve
- Let the meatloaf rest for 10 minutes before slicing.
- Serve with the roasted potatoes.
