Mini Corn Dogs. My kids were seriously impressed with these fun little snacks. In fact, I heard “This is the best thing ever, Mom.” If you have any corn dog enthusiasts in your house, I think they’ll love them too. This is the kind of thing I know my kids will be requesting over and over again!
Ingredients:
- ½ C. Melted butter unsalted
- 2 Large eggs
- ¼ C. Powdered sugar substitute
- 1 C. Buttermilk
- ½ tsp. Baking soda
- 1 C. Yellow cornmeal
- 1 C. All purpose flour
- ½ tsp. Salt
- 6-8 Hot dogs sliced into 1 inch pieces
How To Make Mini Corn Dogs:
- Preheat the oven to 350 degrees.
- In a mixing bowl, combine the melted butter, eggs, sugar substitute, buttermilk, baking soda, cornmeal, flour and salt until a smooth batter has formed.
- Spoon the batter into the sections of well greased mini muffin tins, filling them about ¾ of the way full.
- Place a piece of hot dog into the center of each filled section of the mini muffin tin.
- Bake for 10-12 minutes until lightly browned and cooked through.
