Stupid Pie

Sometimes it’s the name of a recipe that catches you, and that’s just what happened here. Stupid Pie. It immediately had me wondering… Is it stupid because the ingredient list is kind of weird? (It is.) Is it stupid because it’s stupid easy? (It is.) Or, is it because it’s stupid good? (Spoiler alert, it is.)

INGREDIENTS

  • 3 egg whites
  • 1 cup granulated sugar
  • 23 Ritz crackers
  • 1 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 8 oz frozen whipped topping (such as Cool Whip), thawed

How to Make Stupid Pie

  1. Preheat oven to 350°F and grease a 9-inch pie plate with nonstick spray or butter. Set aside.
  2. In a medium mixing bowl, beat egg whites with an electric mixer on low until foamy. Increase speed and continue beating while gradually adding sugar.
  3. Once sugar is incorporated, increase mixer to high and continue beating until stiff peaks form. Set aside.
  4. Crush crackers roughly, but not all the way to crumbs. Stir into whipped egg whites gently, along with the pecans and the vanilla.
  5. Spread mixture in prepared pie pan and bake until lightly golden, 25-30 minutes.
  6. Let cool completely, then top with whipped topping. Can be served right away or chilled for a couple hours to set up first.
