Ingredients

For the Creamed Peas

  • 2 tbsp unsalted butter
  • 1 small shallot or onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 1 cup milk whole or 2%
  • 1 cup frozen peas
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Pinch of nutmeg optional
  • 1 tsp lemon juice

For Serving

  • 2 slices of bread your choice: sourdough, whole wheat, or white
  • Butter optional, for toasting
  • Fresh herbs parsley, chives, or mint, optional

How to Make Creamed Peas on Toast

  • Prepare the Toast
  • Toast bread slices to your preference.
  • Spread a thin layer of butter if desired. Set aside.
  • Cook the Shallots and Garlic
  • In a medium pan, melt butter over medium heat.
  • Add shallot or onion and sauté for 2–3 minutes until softened.
  • Stir in garlic and cook 30 seconds until fragrant.
  • Make the Cream Sauce
  • Sprinkle flour over the onions and garlic, stirring for 1 minute.
  • Gradually pour in milk, whisking constantly to prevent lumps.
  • Cook 2–3 minutes until sauce thickens slightly.
  • Add Peas
  • Stir in peas and cook for 2–3 minutes until heated through.
  • Season with salt, pepper, nutmeg, and a splash of lemon juice.
  • Taste and adjust seasoning.
  • Assemble
  • Spoon the creamy peas over toasted bread.
  • Garnish with fresh herbs if desired.
  • Serve
  • Serve immediately while warm as a light lunch or snack.
