This recipe is really easy to put together, it tastes great, and is a wonderful comfort food. The Meatloaf with Mashed Potatoes and Cheese is also kid approved.

Ingredients
For the meatloaf:
- 1 Onion, Chopped
- 1 tbsp. Olive Oil
- ½ cup Frozen Peas
- ¾ cup Breadcrumbs
- 3 tsp. Garlic, Minced
- 1 ½ lb. Beef, Ground
- 1 Large Egg
- ¼ cup Tomato Sauce
- ¼ cup Parsley, Chopped
- ¼ cup BBQ Sauce
- Salt And Pepper To Taste
For the potatoes:
- 1 ½ Lb Potatoes, peeled, cubed
- ¼ cup Heavy Whipping Cream
- 4 tbsp. Butter
- Salt And Pepper To Taste
- 1 cup Cheddar Cheese, Shredded
How To Make Meatloaf with Mashed Potatoes and Cheese
- Heat the oven to 400 degrees.
- In a skillet over medium heat, cook the onions and garlic in the oil until softened. Remove and let cool.
- Add the remaining ingredients for the meatloaf to a mixing bowl with the onions, and knead with your hands until well combined.
- Form the mixture into a loaf shape in a 9×13 baking dish. Bake for 30 minutes.
- While the meatloaf is baking, boil the potatoes until tender. Drain the water.
- Add in the butter and heavy whipping cream as well as salt and pepper to taste. Mash well.
- Spread the mashed potatoes on the meatloaf, and top with the cheese. Bake for an additional 20 minutes.
