Baked Potato Balls

We always end up with some mashed potato leftovers. But that's not necessarily an issue, because that's how this delicious potato cheese balls recipe came about-super soft, fluffy, with melted cheese on the inside, and deliciously crispy on the outside.
Ingredients
- 2 cups mashed potatoes
- ½ cup shredded cheddar cheese
- ¼ cup chopped chives
- ¼ cup crumbled bacon
- 1 egg, beaten
- ½ cup breadcrumbs
- Salt and pepper, to taste
- Olive oil spray
How To Make Baked Potato Balls
- Preheat oven to 400°F and line a baking sheet with parchment.
- Mix potatoes, cheese, chives, bacon, egg, salt, and pepper in a bowl.
- Form into golf ball-sized rounds.
- Roll in breadcrumbs to coat.
- Place on baking sheet and spray with olive oil.
- Bake for 20-25 minutes or until golden.
- Cool slightly before serving.
