Cowboy Spaghetti

Ingredients

  • 12 oz 340 g spaghetti
  • 1 lb 450 g ground beef
  • 1 medium onion finely chopped
  • 1 bell pepper any color, diced
  • 2 cloves garlic minced
  • 1 14.5 oz / 410 g can diced tomatoes
  • 1 8 oz / 225 g can tomato sauce
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ¼ tsp black pepper
  • ½ tsp salt adjust to taste
  • ½ cup shredded cheddar cheese optional, for topping
  • 2 tbsp olive oil
  • Fresh parsley or green onions for garnish

How To Make Cowboy Spaghetti

  1. Cook the pasta
  2. Bring a large pot of salted water to a boil.
  3. Add the spaghetti and cook according to package directions until al dente.
  4. Drain and set aside.
  5. Cook the beef and vegetables
  6. Heat olive oil in a large skillet over medium heat.
  7. Add chopped onions and bell pepper. Sauté for 3–4 minutes until softened.
  8. Add minced garlic and cook 30 seconds until fragrant.
  9. Add ground beef and cook until browned, breaking it up with a spoon.
  10. Add sauces and seasonings
  11. Stir in the diced tomatoes and tomato sauce.
  12. Add chili powder, smoked paprika, cumin, salt, and black pepper.
  13. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
  14. Combine pasta and sauce
  15. Add cooked spaghetti to the skillet with the beef mixture.
  16. Toss well until pasta is coated evenly with the sauce.
  17. Serve
  18. Divide the Cowboy Spaghetti onto plates.
  19. Sprinkle with shredded cheddar cheese if desired.
  20. Garnish with chopped parsley or green onions.
