
Crockpot Sausage and Potatoes

Whether it’s a busy weekday or a slow weekend, this slow cooker kielbasa promises warmth and satisfaction in every bite. The sausage delivers so much flavor to the vegetables as they simmer together.
Ingredients
- 1½ pounds red potatoes cut into 1-1½ inch pieces
- 1 medium yellow onion cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon granulated garlic or garlic powder
- ½ teaspoon smoked or regular paprika
- 14 ounces smoked sausage or kielbasa cut into 1 inch pieces
- 1 pound fresh green beans rinsed and trimmed, OPTIONAL
Instructions
- Place the potatoes and onions in the crockpot and drizzle with oil. Sprinkle generously with salt, pepper, garlic, and paprika. Toss to coat. Add the kielbasa and stir to mix throughout.
- Place the green beans over the potatoes and sausage. Cover with lid and cook on LOW for 3-4 hours.
- Uncover and stir. Continue cooking, as needed, until the green beans and potatoes are fork-tender.
Notes
I often double the sausage in this recipe. If you have a family of meat lovers, like I do, feel free to multiply it as desired.
