Ingredients:
- 1 ½ lbs.Baby Red Potatoes (Cut In Half)
- ½ lbs. Baby Golden Potatoes (Cut In Half)
- tbsp Olive Oil
- ½ tsp Garlic 1 Tsp Dried Thyme (Minced)
- ½ tsp Oregano (Dried)
- ½ tsp Basil (Dried)
- ⅓ cups Parmesan (Shredded)
- Kosher Salt/ Black Pepper To Taste
- tbsp Unsalted Butter
- 2 tbsp Fresh Parsley Leaves (Chopped)
How To Make Garlic Parmesan Roasted Potatoes:
- Preheat oven to 400 degrees.
- Line a baking sheet with nonstick baking spray. Chop both baby red and golden potatoes in half. Set aside.
- Add the red and golden potatoes in a large bowl.
- Drizzle olive oil, garlic, thyme,oregano, basil and parmesan over the potatoes.
- Season with salt and pepper. Toss.
- Transfer the potatoes onto the prepared baking sheet. Arrange the potatoes in a single layer with the skin side up. Bake at 400 degrees for 15 minutes.
- Remove from the oven and flip the potatoes so that the skin side is facing down.
- Return the potatoes to the oven at 400 degrees for an additional 15 minutes.
