Glorified Rice is the kind of retro dish that walks the line between side dish and dessert, especially if you’re at a midwestern potluck. This old-school, creamy favorite has graced many a church potluck and holiday dinner table over the years, and for good reason: it’s easy, nostalgic, and just plain delicious. Any recipe that can turn plain white rice into something this tasty is a winner in our book. Let’s get into how it’s made…
INGREDIENTS:
- 1 cup white rice, uncooked
- 2 cups water
- 3/4 cup heavy whipping cream, chilled
- 2 (15 oz) cans crushed pineapple with juice
- 1 ½ cups mini marshmallows
- ½ cup granulated sugar
- maraschino cherries, for garnish
How to Make Glorified Rice:
- Add 2 cups of water to a small pot and bring to a boil. Stir in rice and reduce heat to low. Cover and simmer for 20 minutes.
- As rice cooks, whip the heavy cream until stiff peaks form, then set aside.
- Once rice is fully cooked, uncover and stir. Let sit for 10 minutes to cool.
- Transfer rice to a large serving bowl and mix in pineapple, marshmallows, and sugar until well combined, then gently fold in whipped cream.
- Cover and chill for 3-4 hours.
- Garnish with cherries before serving.
