Glorified Rice

Glorified Rice is the kind of retro dish that walks the line between side dish and dessert, especially if you’re at a midwestern potluck. This old-school, creamy favorite has graced many a church potluck and holiday dinner table over the years, and for good reason: it’s easy, nostalgic, and just plain delicious. Any recipe that can turn plain white rice into something this tasty is a winner in our book. Let’s get into how it’s made…

INGREDIENTS:

  • 1 cup white rice, uncooked
  • 2 cups water
  • 3/4 cup heavy whipping cream, chilled
  • 2 (15 oz) cans crushed pineapple with juice
  • 1 ½ cups mini marshmallows
  • ½ cup granulated sugar
  • maraschino cherries, for garnish

How to Make Glorified Rice:

  1. Add 2 cups of water to a small pot and bring to a boil. Stir in rice and reduce heat to low. Cover and simmer for 20 minutes.
  2. As rice cooks, whip the heavy cream until stiff peaks form, then set aside.
  3. Once rice is fully cooked, uncover and stir. Let sit for 10 minutes to cool.
  4. Transfer rice to a large serving bowl and mix in pineapple, marshmallows, and sugar until well combined, then gently fold in whipped cream.
  5. Cover and chill for 3-4 hours.
  6. Garnish with cherries before serving.
