– 1 can (14.5 oz) diced tomatoes, undrained
– 2 tsp dried thyme
– 1 tsp dried rosemary
– 1 bay leaf
– Salt and pepper to taste
– 2 cups fresh spinach (or kale, optional)
– Fresh parsley, chopped (for garnish, optional)
Directions
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the beef stew meat and season with salt and pepper. Brown the meat on all sides, about 5-7 minutes. Remove the beef and set aside.2. **Sauté the Vegetables:**
