Ingredients
- 1 pound lean ground beef
- 1 packet taco seasoning mix 1 ounce
- 1 cup salsa
- 1 15 oz can black beans, drained and rinsed
- 1 cup frozen corn kernels
- 2 cups crushed tortilla chips divided
- 2 cups shredded cheddar cheese divided
- 1/2 cup sliced black olives
- 1/4 cup chopped green onions
- 1/4 cup fresh cilantro chopped (optional)
How To Make Loaded Taco Beef Casserole
- Preheat oven to 350°F.
- In a skillet over medium heat, cook ground beef until browned, 5-7 minutes. Drain excess fat.
- Stir in taco seasoning and salsa. Simmer 2-3 minutes until thickened.
- In a bowl, mix together cooked beef, black beans, and corn.
- Spread 1 cup crushed tortilla chips in a greased 9×13 baking dish. Top with beef mixture.
- Sprinkle 1 cup cheddar cheese over top.
- Add remaining 1 cup tortilla chips, pressing lightly into cheese.
- Top with remaining 1 cup cheddar cheese.
- Bake 20-25 minutes until hot and bubbly.
- Remove from oven and top with olives, green onions and cilantro (if using).
- Let sit 5 minutes before serving.
