Ingredients:

5 potatoes, white or Yukon Gold
 - 
5 pork chops
 - 
1 onion sliced or diced
 - 
1 cup whole milk
 - 
3 cups Cheddar Cheese, shredded
 - 
3 tbsp butter, unsalted
 - 
Salt and pepper to taste
 - 
Optional: I add chives or green onions, a sprinkle of seasoning salt and a pinch of garlic salt to boost the bland flavor
 
Instructions:
- 
Peel and slice the potatoes, no more than ¼ inch each slice
 - 
Peel and quarter the onion, split each quarter in half
 - 
Use a block of Cheddar Cheese, shred it freshly
 - 
Preheat the oven to 350*
 - 
Spray a baking dish
 - 
In a large bowl, combine the potatoes, onions, cheese and the milk, I also add in the seasonings at this time
 - 
Mix all together to combine well
 - 
Put this mix into the prepared baking pan
 - 
Slice the butter into equal slices and lay on top of the potato mix
 - 
Place the pork chops on top of the cheese and potato mixture
 - 
Bake for 50 to 55 minutes at 350*
 - 
Halfway through the cooking time, flip the pork chops over
 - 
Check the pork to ensure it is no longer pink, if it is, continue baking for another 15 minutes.
 - 
Stab the potatoes with a fork to check for tenderness. If they also need longer, cover the baking pan with aluminum foil to prevent the meat from drying out.
