
Ingredients
Roast
- 3 lbs 1.4 kg beef chuck roast
- Salt & black pepper to taste
- 2 tbsp olive oil
Onions & Sauce
- 4 large yellow onions thinly sliced
- 3 cloves garlic minced
- 1 tbsp tomato paste
- 2 cups beef broth
- 1 cup dry white wine or extra beef broth if preferred
- 1 tsp fresh thyme or ½ tsp dried thyme
- 1 tsp fresh rosemary or ½ tsp dried rosemary
- 2 bay leaves
- 2 tsp Worcestershire sauce
Optional Garnish
- Fresh parsley chopped
- Caramelized onions from slow cooker
How To Make Slow Cooker French Onion Chuck Roast
- Prepare the Roast
- Pat the chuck roast dry with paper towels.
- Season generously with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear the roast 2–3 minutes per side until browned.
- Prepare the Onions
- In the same skillet, sauté onions for 5–6 minutes until slightly softened.
- Add garlic and tomato paste, cook 1–2 minutes until fragrant.
- Assemble in Slow Cooker
- Place the seared roast in the slow cooker.
- Pour the onion mixture over the top.
- Add beef broth, white wine, thyme, rosemary, bay leaves, and Worcestershire sauce.
- Cook
- Cover and cook on low for 7–8 hours (or high for 4–5 hours) until meat is tender and shreds easily.
- Finish & Serve
- Remove the roast and let it rest 10 minutes.
- Remove bay leaves from the sauce.
- Slice or shred the meat and pour sauce and onions over the top.
- Garnish with fresh parsley if desired.
