Ingredients
  

  • 4 medium russet potatoes
  • 8 –10 slices bacon cut in half lengthwise if large slices
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika smoked or sweet
  • ½ teaspoon onion powder
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • Optional: ½ teaspoon chili powder for a spicy kick
  • Optional garnish: chopped parsley grated parmesan, or dipping sauce (ranch, mayo-garlic, etc.)

Instructions
 

  • Preheat oven: Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper or foil and lightly grease it.
  • Prepare potatoes: Wash potatoes well (you can peel them if you prefer). Cut each potato into thick wedges (about 6–8 wedges per potato).
  • Season the wedges: In a large bowl, toss potato wedges with olive oil, garlic powder, paprika, onion powder, salt, and pepper until evenly coated.
  • Wrap with bacon: Wrap each potato wedge with a strip of bacon. Slight overlap helps it stay secure while baking. Place seam-side down on the baking tray.
  • Bake: Bake for 35–45 minutes, flipping halfway through, until potatoes are tender inside and bacon is crispy and golden.
  • Optional crisp finish: For extra crispy bacon, broil for 2–3 minutes at the end (watch closely to avoid burning).
  • Serve: Let cool for 5 minutes, then garnish with parsley or parmesan and serve with your favorite dipping sauce.

Notes

Pro-Tip: To ensure the bottom of your potato wedges get just as crispy as the top, place a wire cooling rack directly on your baking sheet and bake the bacon-wrapped wedges elevated on the rack. This allows the hot oven air to circulate underneath the potatoes and lets excess grease drip away!
