Cheesy Asparagus Casserole

This cheesy asparagus casserole is a creamy, savory side dish made with fresh asparagus, a rich parmesan and pepper jack cheese sauce, and crispy bacon on top. It is easy enough for a weeknight dinner but flavorful enough for holidays, potlucks, and family gatherings.

Ingredients
  

  • 2 bunches fresh asparagus washed and trimmed
  • 1 tablespoon butter
  • 2 ounces cream cheese softened
  • ½ cup heavy whipping cream
  • 1 tablespoon chicken broth
  • ¼ teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • teaspoon salt or to taste
  • teaspoon black pepper
  • cup grated parmesan cheese
  • ¼ cup shredded pepper jack cheese
  • ½ cup shredded mozzarella cheese optional
  • ½ teaspoon red pepper flakes optional
  • cup cooked crumbled bacon

Instructions
 

  • Preheat the oven to 400°F. Lightly grease a 9x13-inch baking dish.
  • Wash the asparagus and trim off the tough woody ends. Arrange the asparagus in an even layer in the prepared baking dish.
  • In a skillet over medium heat, melt the butter. Add the softened cream cheese, heavy cream, chicken broth, Italian seasoning, garlic powder, paprika, salt, and black pepper.
  • Whisk until the cream cheese melts and the sauce begins to come together.
  • Reduce the heat to medium-low and let the sauce simmer for a few minutes, whisking often, until slightly thickened.
  • Stir in the parmesan cheese and pepper jack cheese. Whisk until melted and smooth.
  • Pour the cheese sauce over the center of the asparagus. Sprinkle mozzarella cheese over the top if using.
  • Add red pepper flakes if you want a little heat.
  • Bake for 12 to 15 minutes, or until the asparagus is tender and the sauce is bubbling.
  • Remove from the oven and sprinkle the cooked crumbled bacon over the top.
  • Return to the oven for 2 to 3 minutes.
  • Serve warm.

Notes

For crisp-tender asparagus, start checking the casserole around 12 minutes. Thin asparagus may cook faster, while thicker stalks may need the full baking time.
If you prefer a milder flavor, use Monterey Jack or mozzarella instead of pepper jack.
For best texture, serve this casserole fresh from the oven.
