Cheesy Corn and Spinach Casserole

Ingredients
  

  • 2 cups fresh spinach leaves
  • 1 can 15 oz corn kernels, drained
  • 3 large eggs
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 tablespoon butter for greasing

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Grease a medium-sized baking dish with butter.
  • In a large mixing bowl, whisk together the eggs, milk, flour, salt, pepper, and garlic powder until smooth.
  • Stir in the corn kernels, fresh spinach leaves, and half of the shredded cheddar cheese.
  • Pour the mixture into the prepared baking dish, spreading it evenly.
  • Sprinkle the remaining cheddar cheese over the top.
  • Bake in the preheated oven for 30 to 35 minutes, or until the top is golden brown and the casserole is set.
  • Let it cool for a few minutes before serving.

Notes

For the best texture, drain the corn very well before adding it to the mixture so the casserole bakes up tender, cheesy, and set instead of watery.
