Ingredients
  

  • 1.5 lbs 680g Ground Beef (80/20 preferred)
  • 1 medium Yellow Onion finely diced
  • 3 cloves Garlic minced
  • 1 can 15 oz Sweet Corn, drained well
  • 1 can 15 oz Baked Beans or Pinto Beans, rinsed and drained
  • 1 can 10.5 oz Condensed Cream of Mushroom Soup (or Cream of Chicken)
  • ½ cup Full-fat Sour Cream
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt adjust to taste
  • ½ teaspoon Black Pepper
  • 2 cups Sharp Cheddar Cheese freshly grated
  • 1 package 32 oz Frozen Tater Tots

Instructions
 

  • Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with non-stick cooking spray.
  • Cook the Meat: In a large skillet over medium-high heat, add the ground beef. Cook, breaking it into small crumbles, until deeply browned (about 5-7 minutes).
  • Sauté Aromatics: Add the diced onion to the beef and cook for 3-4 minutes until softened. Add the minced garlic and cook for 1 more minute until fragrant. Carefully drain excess grease from the skillet.
  • Create the Filling: Reduce heat to medium-low. Stir in the drained corn, beans, Worcestershire sauce, smoked paprika, salt, and pepper.
  • Add the Creamy Binder: Remove the skillet from the heat. Fold in the condensed soup and sour cream until the mixture is evenly coated and creamy.
  • Assemble: Pour the beef mixture into your prepared 9x13 baking dish, spreading it out into an even, flat layer.
  • Add Cheese & Tots: Sprinkle the freshly grated cheddar cheese evenly over the beef mixture. Next, arrange the frozen tater tots in a single, tight layer across the entire top of the casserole.
  • Bake: Bake uncovered for 40 to 45 minutes, or until the filling is bubbling around the edges and the tater tots are deeply golden brown and crispy.
  • Rest and Serve: Remove from the oven and let the casserole rest for 10 minutes before serving. This allows the sauce to set up perfectly. Enjoy!
