Ingredients

For the Salad:

  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 cup cooked ground beef seasoned with taco seasoning
  • ½ cup shredded cheddar cheese
  • ¼ cup sliced black olives
  • ½ cup diced red onion
  • 1 cup crushed Doritos Nacho Cheese or your favorite flavor
  • ¼ cup sour cream optional
  • ¼ cup salsa or taco sauce
  • 2 tablespoons chopped fresh cilantro optional

For the Homemade Taco Seasoning:

  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt & pepper to taste

Instructions

  • Prepare the beef: In a large skillet over medium heat, cook the ground beef until completely browned and no pink remains. Carefully drain the excess fat from the pan.
  • Season the meat: Stir the homemade taco seasoning (chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper) into the beef along with a splash of water. Let it simmer gently for 2–3 minutes until the liquid reduces and coats the meat. Remove the skillet from the heat and let it cool slightly.
  • Assemble the salad base: In a large serving bowl, combine the chopped romaine lettuce, halved cherry tomatoes, diced red onion, sliced black olives, and shredded cheddar cheese.
  • Add protein: Top the fresh vegetable base generously with the warm, seasoned ground beef.
  • Add crunch: Sprinkle the crushed Doritos evenly over the top of the entire salad.
  • Dress it up: Drizzle the sour cream and salsa directly over the top, or toss everything gently to combine the flavors.
  • Garnish and Serve: Sprinkle the fresh chopped cilantro on top if desired. Serve immediately to ensure the absolute best crunch and texture!

Notes

If you are taking this salad to a neighborhood potluck or barbecue, do not mix the chips or the warm meat in at home! Bring the cold base, the hot meat, and the bag of chips in completely separate containers, and toss them all together right on the picnic table just seconds before everyone grabs a plate.
