Ingredients
  

  • 1 lb ground beef
  • 1 packet 1 oz Taco Seasoning mix
  • 8 oz cream cheese softened to room temperature
  • ½ cup salsa mild, medium, or hot
  • 1 cup Cheddar Cheese freshly shredded
  • 12 6-inch flour tortillas
  • 2 tbsp butter melted
  • Optional Toppings: Sour cream extra salsa, chopped green onions, shredded lettuce, sliced black olives

Instructions
 

  • Prep the Oven: Preheat your oven to 350°F (175°C). Lightly spray a large baking tray with non-stick cooking spray or line it with parchment paper for easy cleanup.
  • Cook the Beef: Crumble the ground beef into a large skillet over medium-high heat. Cook thoroughly until no pink remains. Drain the excess grease from the skillet completely.
  • Season the Meat: Add the packet of taco seasoning mix to the browned beef, following the water and simmering directions provided on the seasoning package. Once thickened, remove from the heat.
  • Make the Creamy Filling: In a medium-sized mixing bowl, beat the softened cream cheese until it is completely smooth and free of lumps. Add in the ½ cup of salsa and blend the mixture well.
  • Assemble the Tacos: Hold a 6-inch tortilla in your hand or lay it flat on a clean surface. Place a spoonful of the cream cheese and salsa mixture directly in the center.
  • Add Protein and Cheese: Spoon a generous layer of the taco-flavored beef over the cream cheese mixture, ensuring it covers the spread. Sprinkle a layer of shredded cheddar cheese over the beef.
  • Fold and Roll: Fold the sides of the tortilla inward, then fold the bottom up over the filling and roll it tightly, exactly as you would with a burrito. Place the rolled tortilla seam-side down onto the prepared baking tray. Repeat until all 12 tortillas are filled.
  • Butter and Bake: Using a pastry brush, lightly brush the tops of all the tortilla rolls with the melted butter. Bake in the preheated oven for exactly 15 minutes, or until the tortillas are beautifully golden and crispy.
  • Garnish and Serve: Remove the pocket tacos from the oven and let them sit for 2-3 minutes. Serve warm with your choice of toppings, such as crisp lettuce, extra salsa, cool sour cream, or extra cheese. Enjoy!
