Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Crisp the Bacon: In a large skillet over medium heat, cook the chopped bacon until crisp. Remove with a slotted spoon and drain on a paper towel. Keep 1 tablespoon of bacon grease in the pan.
Brown the Meat: Add the diced onion to the skillet and sauté for 3-4 minutes. Add minced garlic and cook for 30 seconds. Add the ground beef, break it apart, and cook until browned. Drain any excess grease.
Create the Sauce: Reduce heat to low. Stir in the softened cream cheese, sugar-free ketchup, mustard, Worcestershire sauce, salt, and pepper. Simmer until the cream cheese is fully melted. Stir in half of the cooked bacon.
Whisk the Binder: In a small bowl, whisk the eggs and heavy cream until perfectly smooth.
Assemble: Spread the ground beef mixture evenly into the prepared baking dish. Pour the egg and cream mixture evenly over the top.
Add Toppings: Sprinkle the shredded sharp cheddar cheese and the remaining cooked bacon over the entire casserole.
Bake: Bake uncovered for 20-25 minutes until the cheese is melted, golden, and the casserole is bubbly around the edges.
Serve: Let the casserole rest for 5 minutes before slicing and serving. Garnish with fresh parsley or extra pickles if desired.
