These oven baked 3-ingredients potato rings are crispy on the edges, tender in the center, and made with simple pantry staples. They are a fun and easy potato side dish or appetizer that bakes up golden without deep frying.

Instructions
Thoroughly wash and dry the potatoes. Peel them if desired.
Slice the potatoes horizontally into rounds, about ¼-inch thick.
Use a small circular cookie cutter, the wide end of a piping tip, or an apple corer to punch out the center of each potato slice and create a ring shape.
Place the potato rings in a large bowl.
Add the olive oil or melted butter and seasoning. Toss until every potato ring is evenly coated.
Preheat the oven to 425°F (220°C).
Line a baking sheet with parchment paper.
Arrange the potato rings in a single layer on the prepared baking sheet.
Bake for 20 to 25 minutes, flipping halfway through, until the rings are golden brown and crispy on the edges.
