Poolside Dip
Poolside Dip is a creamy ranch-style party dip loaded with fire-roasted corn, red bell pepper, jalapenos, black olives, and green onions. It is cool, chunky, flavorful, and perfect for serving with chips, crackers, or fresh vegetables.

Ingredients

8 oz packages cream cheese, softened

1 oz packet ranch seasoning mix

red bell pepper
seeded and diced

4 oz can diced jalapeno, drained

6 oz can black olives, drained and diced

15 oz can fire-roasted corn, drained

diced, plus more for topping
Instructions
In a mixing bowl, stir together the softened cream cheese and ranch seasoning until smooth and well combined.
Add the diced red bell pepper, drained diced jalapeno, drained and diced black olives, drained fire-roasted corn, and diced green onions.
Stir until all ingredients are evenly combined and coated in the creamy ranch mixture.
Transfer the dip to a serving dish.
Serve immediately, or cover and chill until ready to serve.
Top with extra diced green onions before serving, if desired.
Notes
For the best texture, drain the canned ingredients very well before mixing so the dip stays thick, creamy, and easy to scoop.
